PORTABLE, Stone-baked Wood Fired Pizza Oven. (handmade).
Handcrafted from start to finish in a somerset workshop comes the ‘Encasta’ woodfired pizza/bread oven, complete with built – in deluxe thermometer and supported by a practical and mobile wood store allowing you to situate the complete unit when entertaining friends or cooking for the family where you wish, but also giving you the option to store it away or moving to a preffered location or even taking to a friends for the evening! – The ‘encasta’ oven has been designed to be as practical and easy to setup as possible allowing you to start cooking instantly and efficiently after receiving the unit by pallet delivery service. – THE OVEN – firstly using a combination of practical planning including the use of formwork moulds, and traditional techniques a sandmould is built up gradually created to form the cooking area space which is dug out at a later stage, this sandmould allows you cast the internal cooking dome using high temperature proof refractory cement with added chopped strands for extra strength, – Once cast, heatproof thermal blanket is placed over the refractory dome to act as your insulation, aswell as reinforcing to strengthen the inner oven and allowing the next stage of the decorative outer concrete to have something to ‘key’ into making the unit one. One big feature that this oven does boast is the integrated thermometer which makes cooking on the oven not only more fun as you improve your fires/heat skills but also makes it more practical as you can accurately monitor the cooking temperature of the oven, instead of placing a thermometer in every few mins, or putting your hand in to check the temp allowing you more time to socialise or prepare your food! With the thermometer built in you can see what works and develop techniques like using the door, adding kindling for quick burst heat or seeing how good dry wood really doesn’t need much looking after at all, within one or 2 fires you’ll be able to get the oven upto high heat within 30-40mins, the thermometer is a great addition for this! – Once the thermometer is in place and the formwork is placed together a ratioed blend of assorted aggregate vermiculite and cement is mixed together to pour into the form-work giving the the oven its shape and decorative look, in this case a natural sandy stone look that is both authentic and natural. Using good quality formwork the overall finish of the oven is both smooth and polished. – CONCRETE PLINTH AND HEATPROOF BRICKS – The ovens floor is made of 2 parts, firstly using again a formwork mould a reinforced and insulated concrete plinth is cast to the right, size giving the heat-proof bricks a level floor to sit on, and working as a heat-pad reflecting back the heat into the oven reducing heatloss and providing the floor with high heat which is important when for example, cooking pizza the base goes cripsy and cooks fully due to the well insulated concrete pad under the bricks. The bricks themself are high quality refractory bricks which are simply placed on the concrete pad before the oven is lifted into place. THE PORTABLE BASE/WOODSTORE – Constructed using softwood treated sleepers cut to size then countersunk and screwed together, battoned slats screwed into place for supporting the kiln dried/seasoned logs, and made portable by adding heavy weight loading lockable wheels makes the ‘encasta’ woodfired oven complete and practical, if its for taking to fetes, car boot sales, farmers markets or to have sat in your garden area or terrace whatever the space the unit will not look out of place! With a seperate shelf built in for the kindling for convenience the oven unit is really ready to fire up and use as soon as you receive it, complete with instructions, hints and tips and recommendations for online forums and books from the ovenmaker himself giving you the best chance of success straight away, but like most things practice makes perfect and everyone has there own techniques and habits to get the best results, as the oven gets used more and more you’ll enhance your cooking skills and be able to impress friends and family with your knowledge of woodfired cooking and enjoy learning the art of woodfired oven cooking and join in the strong growing interest shared by celebrity chefs and people of all cooking habits and backgrounds who are enjoying the fun of outdoor cooking, aswell as people making a living form selling food from the ovens worldwide! – OVEN DIMENSIONS AND WEIGHT – oven width – 660mm – Height – 320mm – depth – 610mm oven weight – expect 100kgs oven plinth- 690mm – depth – 650mm – thickness 50mm oven plinth weight – expect 40kgs. – OVEN BASE DIMENSIONS AND WEIGHT – base height – 900mm – base depth – 600mm – base width 660mm – OVEN COOKING SPACE – The internal cooking space of the oven is 550mm wide – Depth 500mm height from brick to ceiling 220mm (average) – When cooking bread, or slow cooking dishes, when the oven has reached a good temperature (been fired for a minimum of 2 hrs) – using oven gloves simply unslot the removable chimney and rest on top of oven, place concrete bung provided into the smoke slot then replace chimney, this will keep the heat in the oven whilst cooking, if you intend to resume pizza cooking after baking another fire will be required which would fire quickly due to ovens heat, remove the chimney in same process and remove the concrete ‘bung’ and replace chimney. – FULL KIT INCLUDES – Detatchable flu (6oomm) that slots into space oven with integrated thermometer refractory bricks concrete insulated plinth portable wood store solid oak handcarved door ‘FOOD FOR THOUGHT’ – The oven is handcrafted and well built and used sensibly and practically will offer years and years of use but please be open minded, as it it built for outdoor use it is likely to feal all the elements of our typical british climate, and when not in use if possible store in a dry place or in very cold conditions at least cover, this isn’t essential but practical as if the oven hasnt been used for sometime and it is fired up to high heat in cold conditions it could potentially show hairline cracks (doubtful but possible) due to the concrete expanding due to high heat, as the oven has been made in stages so you shouldn’t worry as this is merely surface cracks and is why an expansion joint is added to the face, top and back of oven to allow slight movements in the concrete and discourages any hairline cracks. – On initial ‘soaking’/firing i would suggest using the kindling only as this process is like ‘breaking in the oven’. The oven is well insulated and the majority of the oven will remain cool, but the outer walls where the fire is will heat aswell as the flu and face of oven so please be aware of this especially with children (similar to bbqs, firepits). The ovens base is on high weight bearing wheels which two of them are lockable so when the oven is situated it may be an idea to make use of these lockable wheels. – Bespoke concrete bistro tables, concrete planters with entegrated objects, breakfast bars with concrete or wooden countertops/worktops and installation of bespoke traditonal bread-ovens of all shapes and sizes considered are available as i make to customers ideas and with combined ideas and designs so please get in-touch with any ideas i could help with.
